Could a person really float away if attached to enough balloons filled with Helium? How many balloons would it take?

Of course.
How much do you weigh? |

One helium balloon would suffice - if it was big enough.
The Mythbusters tested - & proved - this "myth" some time ago, I think it was one of the earliest myths they tested. ____________________________________________ "The Early Bird catches the Worm", only goes to prove that the Worm should've stayed in bed!! I've taken a vow of poverty. To annoy me, send money. There's room for all God's creatures. Right next to the mashed potatoes. Health is merely the slowest possible rate at which one can die. |

They tested it in two forms. The first one was a deck chair connected to 20 or 30 large helium weather balloons. The second time the (junior) mythbusters tried to lift a small child up using ordinary balloons. They needed 4 or 5 thousand. |
